A simple pasta recipe.

Penne - 150g
Green asparagus - 8
Milk - about 25cl - Preferably fresh and whole milk.
Salt
Pepper
Bring a large pan of water to the boil.
Throw in a small handful of coarse salt and the asparagus
Let boil for 15 minutes.
Take the asparagus away with a slotted spoon. Keep the water boiling to cook the pasta in.
Cut the asparagus, discarding any hard part. Keep the heads whole to the side.
Purée the cut stalks with milk (a staff mixer is perfect to do this).
Put in some salt as needed.
Pour the cream into a pan and heat very gently.
Throw the pasta into the boiling water and cook for 12 minutes (or whatever specifies the packet).
Drain the pasta and put in the pan with the asparagus cream.
Give it a good stir.
Add the aparagus heads. Stir again more gently.
Serve.
Add some freshly ground black pepper.
Cheese can be added.
