Now I had heard of trouts with almonds, but chicken?
Turned out that this was a Chinese-ish recipe...

Chicken with almonds



You need some chicken breast (a full one for four persons should do it), some almonds (two hands full), some fresh ginger, onions or shallots (one or two - or more if you like them), flour, oil and some soy sauce.

You first roast the almonds in a skillet or non stick pan, until golden.

Chop the onions or shallots very thinly and also the fresh ginger (cut the ginger in thin strips).
Fry those in oil.
Cut the chicken into cubes of strips and coat with flour.
Add the chicken bits to the onion/ginger fry and cook, tossing every now and then, and cook for 10 to 20 minutes (strips will cook more quickly than cubes).

Add the almonds and soy sauce to taste (I used half regular soy sauce and half sweet soy sauce plus a little water to ensure the dish would not be too salty as we use very little salt at home).
Stir.
Eat.

I had some green asparagus with that and it was a good pairing.
